Our 3rd Natural Processed bean, Pacamara is an outstanding and complex coffee. This coffee is packed with notes of fruits, mainly blueberry, blackberry, and cranberry. Its complexity, the citric finish and the delightful body and acidity, make of Pacamara one of the most regarded coffees in the life of Viva. But its story is even more remarkable.
Roast Level: Light + (Please note that due to its Processing method, some slight oil might be observed)
Process: Natural
Farm: Single Origin Microlot from Finca La Joya in the Region of Montecillos, Marcala
Flavor Notes: blueberry, blackberry, cranberry, orange and stone fruits with remarkable body and crisp acidity
Recommended water to coffee ratio (drip/pour over): 18:1. Add 18 grams of water for every 1 gram of ground coffee. Or 2 - 2.5 tablespoons of ground coffee for an 8oz cup of water.
Enjoyment Suggestions: We usually take it black to fully enjoy the notes and flavors.
History: Pacamara represents trust and commitment. In 2021, when Gerardo first visited Carlos and Juan Carlos of Finca La Joya, the three of them were riding together inside a single cabin truck. Let's just say that the space was tight. But on the ride back to Marcala, after all of them had walked through the farm, Mr. Juan Carlos made a comment: "Gerardo, Viva will go far because of its mission. I can see it. Today, you are going home with 20 lbs of samples. But I am sure that we will grow together and that the future is bright". And he wasn't wrong. When Gerardo went back to Marcala in February 2024 for Viva's annual sourcing trip, he joined the Amaya family to enjoy a delicious Honduran dinner at their house. But this time it wasn't just Gerardo. This time it was a group of 9 guests from USA that had joined Gerardo on this trip. After dinner, Mr. Juan Carlos reached out to Gerardo and said "Remember what I said 3 years ago? This is the result. This is what we have created". And after saying that, both Carlos and his father gave him a sample of the first harvest of the Pacamara beans as a gift. A gift honoring trust, commitment, and mutual partnership.
