Our first Premium Grade coffee, La Familia is a coffee with outstanding sweetness, remarkable body, and penetrating notes of berries and grapes. This coffee was a category winner at the 2019 Honduran Cup of Excellence competition!! This is an outstanding achievement that only the best coffees in any given country can achieve.

But what makes this coffee so remarkable? Let’s start with its altitude sitting at 1035mts in some of the most fertile areas in the Copán Coffee Region. But really the trick happens with its drying process. This bean has been meticulously optimized by applying a natural process. In a natural process, the coffee pulp is not removed from the cherry while drying on raised beds. This natural drying process requires a minimum of 21 days for the coffee beans to obtain the ideal moisture level. In comparison, a washed process only requires 8 days for the beans to dry to the optimal conditions. When the pulp is kept, all the sugars and flavors from the pulp are absorbed by the bean, infusing it with remarkable sweetness and notes that otherwise would’ve been lost through the washing and drying process.

  • Process: Natural

  • Recommended water to coffee ratio (drip/pour over): 18:1. Add 18 grams of water for every 1 gram of ground coffee. Or 2 - 2.5 tablespoons of ground coffee for an 8oz cup of water.

History for La Familia Beans:

In April of 2021, during one of his travels through the Western Sierras, Gerardo was able to connect with a hard working family, the Sanchez-Tabora family. Evelyn and Hector are a 3rd generation coffee producer family originally from Santa Rosa, Copán. Evelyn’s grandfather, “Don” Tulio Tabora started producing coffee in this area since the 1970s. But it wasn’t until 2018 and 2019 when Evelyn and Hector decided to start developing specialty grade coffee. They took advantage of the ideal soil, a perfectly balanced micro-climate, and outstanding natural shade that characterizes this region. These conditions, in combination with a natural drying process, has allowed them to produce one of the best cups in the entire country. But their passion goes beyond high quality coffee beans. Their desire is not only to provide a dignifying living for their family and their children, but also to help the local community of which they are part of, the “Aldea el Rodeo”. Here they employ more than 100 people during peak harvest season. When Gerardo met the Sanchez-Tabora family, he immediately felt a connection and passion for a better world and high quality coffee. Today, this beautiful family of four grows some of the best coffee in Honduras and has now become part of the Viva Coffee Roasters extended family.
