Miel is our first ever Typica Mejorado bean. Miel (Spanish for Honey) is a symphony of flavors and complexity, with an elegant mouthfeel and delicious sweetness.

Farm: Single Origin Microlot from Finca Deborah in Region of Montecillos, Marcala
Flavor Notes: Delicious tropical fruits, hogberry (nanche), maple syrup, peach, berries, cream, and chocolate
Enjoyment Suggestions: We drink it black. No sugar or sweeteners needed
Recommended water to coffee ratio (drip/pour over): 18:1. Add 18 grams of water for every 1 gram of ground coffee. Or 2 - 2.5 tablespoons of ground coffee for an 8oz cup of water.
History:
Meet Cecilia Quan, farmer at Finca Deborah in Honduras! Farming alongside of Cecilia is her grandmother Irma Acosta. "Doña" Irma is a strong leader in the community, that at her 91 years of age supports and mentors Cecilia as a 3rd generation farmer.
Being located in the region of Montecillos, cool temperatures and high altitude contribute ideal growing conditions, while the region’s volcanic soil providing the farms' beans with essential minerals that enhance overall quality and taste. At Finca Deborah, Cecilia and her husband strive to find harmony with the beauty of the region. The strive have minimal impact on the environment and employing eco-friendly methods, including organic farming practices and water conservation efforts. As told by Cecilia, "we work with passion to find a balance with all the beautiful animals, trees, and plants that are part of our farm. All of the coffees are shade grown and we love to share this amazing coffee with all of you." Viva was able to connect with Cecilia through a partnership with CIMA Cafe who specializes in Honduran green beans. The latest bean Cecilia has provided to Viva is our first ever Typica Mejorado bean. It is a symphony of flavors and complexity, with an elegant mouthfeel and delicious sweetness.
